Kaua‘i’s North Shore is about to welcome a culinary heavyweight from the Italian Alps.

Chef Riccardo Gaspari, who is celebrated for redefining sustainable fine dining, will headline 1 Hotel Hanalei Bay’s Chefs by Nature event this November.

The two-day culinary experience will highlight Gaspari’s signature approach to regenerative cuisine, blending Alpine tradition with Hawai‘i’s local bounty.

He is the chef-owner of SanBrite, a Michelin-starred farmhouse restaurant known for its innovative Dolomite cuisine. Gaspari brings his dedication to sustainability and exceptional environmental responsibility to the island, where guests can enjoy a celebration of nature, flavor and Kauaʻi’s community through two exclusive events:

  • Nov. 15: The Paired by Nature reception will take guests through a culinary journey with Gaspari. He will present a seasonal tasting menu inspired by his home in the Dolomites, where he also operates El Brite de Larieto.

At this event, Gaspari will combine locally sourced Kaua‘i ingredients, mixing and preparing them for each dish. Each course will be expertly paired by a Master Sommelier to highlight the connection between terroir and seasonality.

  • Nov. 16: The Cooking Masterclass invites guests to an intimate, hands-on session with Gaspari, where he will guide them through the principles of regenerative Alpine cuisine, sharing the techniques behind his signature dishes and insights into sustainable cooking practices.

Proceeds support student cooks in the Kaua‘i Community College Culinary Arts Program in Līhuʻe.

In itsʻ fifth season, the Chefs by Nature series at 1 Hotel Hanalei Bay brings acclaimed chefs from around the world to share their perspectives on sustainability and local sourcing.

Past featured chefs include Amanda Freitag, Nancy Silverton, Melissa King and Hawai‘i’s own Lee Anne Wong.

For Gaspari, the event is more than a culinary showcase. It is a meeting of two worlds: the rugged Dolomites and the lush landscapes of Hanalei Bay.
