Royal Sonesta Kaua‘i Resort hires local restaurant owner as executive sous chef
Royal Sonesta Kaua‘i Resort has appointed Victor Heresa as executive sous chef.
With a rich culinary background and a passion for blending tradition with innovation, Heresa brings exceptional talent and creativity to the resort’s dining experiences, officials stated in a press release Monday.
Heresa is well known on Kaua‘i for his long-standing success as the owner of Sushi Bushido, where his original creations like the Golden Roll, Lava Roll, and Cosmopolitan Roll became beloved favorites across the island. After 20 years of running his restaurant, Heresa closed the eatery in December 2024.
He now steps into a new chapter with his role as executive sous chef at Royal Sonesta Kaua‘i Resort
“I’m excited to join the talented culinary team at Royal Sonesta Kaua‘i Resort and look forward to sharing my passion for sushi and innovative cuisine,” Heresa said. “I can’t wait to create dishes that celebrate Kaua‘i’s vibrant flavors and culture.”
Previously, Heresa served as the head chef at Sonesta’s Aupaka Terrace, where he refined his skills in delivering memorable culinary experiences. A graduate of Kapaʻa High School, Heresa pursued specialized culinary training in traditional Japanese sushi preparation.
His distinctive style fuses traditional techniques with contemporary flair and local influences, creating dishes that resonate with both residents and visitors alike.
